Cheesesteak Egg Rolls


Thank you to Chef Tony Briggs from Certified Angus Beef for his idea of braising the brisket in root beer for this recipe. The root beer adds a wonderful sweet note to the beef and it’s fantastic!!

INGREDIENTS
For The Brisket:
  • 1 tablespoon canola oil
  • 1 ½ cups onion chopped
  • 2 tablespoons tomato paste
  • 2 cups dry red wine, such as merlot
  • 3 14-ounce cans beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1 tablespoon canola oil
  • 1 tablespoon olive oil
  • 2 pounds Certified Angus Beef brisket, trimmed of fat and cut into 3 inch cubes
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 3 12-ounce bottles root beer
  • 8 whole black peppercorns
  • 2 cinnamon sticks

For the Egg Roll Filling
  • 1 tablespoon canola oil, divided
  • 8 ounces button mushrooms diced
  • ¼ teaspoon salt
  • 1 cup onion diced
  • 1½ tablespoons garlic minced
  • ½ pound diced provolone cheese
  • 1 1-pound package large eggroll wrappers (20 per package)
  • 1 egg white with two tablespoons water to moisten wrapper edges
  • Vegetable oil for frying

For the Queso Dip
  • 4 tablespoons diced jarred jalapeno
  • 1 pound white American cheese
  • ¼ cup beer or ale

Ingredients
  • 4 cups all purpose flour (500g or 1/2 kg)
  • 2 1/2 teaspoons active dry yeast (1 oz sachet)
  • 12 oz evaporated milk (354ml or 1 3/4 cups)
  • 3 tablespoons butter - melted
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt (not heaped)
  • 1 egg


Instructions
  • Heat the milk to be just slightly warm to the touch. I heated it for 1 minute in the microwave. The milk should be about 110 degrees Fahrenheit.

CHICAGO DEEP DISH PIZZA


Chicago Deep Dish Pizza is the perfect comfort meal for the end of a long week. With its flaky, buttery crust, oozing creamy mozzarella, zesty Italian pepperoni and seasoned sauce…it puts all other pizzas to shame!

INGREDIENTS
Crust
  • 4 cups all purpose flour
  • 3 tablespoons yellow cornmeal
  • 1¾ teaspoons salt
  • 2¾ teaspoons instant yeast
  • 2 tablespoons olive oil
  • 4 tablespoons butter, melted
  • 2 tablespoons vegetable oil or salad oil
  • 1 cup + 2 tablespoons lukewarm water

Filling
  • ¾ lb. mozzarella cheese, sliced
  • 1 cup pepperoni pieces
  • 28-ounce can plum tomatoes, lightly crushed; or 28-ounce can diced or chopped tomatoes
  • 2 to 4 garlic cloves, peeled and minced, optional
  • 1 tablespoon sugar, optional
  • 1 to 2 teaspoons Pizza Seasoning or mixed dried Italian herbs (oregano, basil, rosemary), to taste
  • 1 cup freshly grated Parmesan or Asiago cheese
  • 2 tablespoons olive oil, to drizzle on top


INSTRUCTIONS
  1. To make the crust: Mix the dough ingredients, and knead — by hand, mixer, or bread machine — to make a smooth crust. This will take about 7 minutes at medium-low speed in a stand mixer.
