INGREDIENTS:


Any leftover diced vegetables you have, such as red peppers, green peppers, onions, peas, zucchini, or tomatoes.
Herbs and spices such as rosemary, garlic powder, basil leaves minced, oregano, or minced sage. You can also add diced jalapeños to give it a kick.
Grated leftover cheese like Parmesan, cheddar, Monterey Jack, or mozzarella.
Diced leftover already cooked meat like bacon, chicken, ham, or beef.
2 eggs per muffin.
1 tablespoon cream per muffin.
Butter or olive oil.
Salt and pepper to taste.

INSTRUCTIONS:


• Preheat oven to 350 degrees.

• In a skillet, cook your selected vegetables until tender with enough butter or oil to make sure they don’t stick to the pan. Season them with selected spices.

INGREDIENTS:


2 1/2 cups flour
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
8 Tablespoons cold butter
1 1/2 cups fresh blueberries
1/2 cup shredded sweetened coconut
3/4 cup heavy cream + 1 Tablespoon
1 egg
1 teaspoon coconut extract
2-3 teaspoons coarse raw sugar
For the Glaze
1 1/2 cups powdered sugar
1 teaspoon coconut extract
2 Tablespoons water

INSTRUCTIONS:


• Preheat oven to 400 degrees. Line your baking sheet with parchment paper or a Silpat.

• Whisk together the flour, sugar, baking powder, and salt.

• Add the cold butter. Using a fork or pastry blender, mix in the butter until there are no large pieces of butter left. Refrigerate the flour mixture while the oven heats and you prep the other ingredients.

• Stir in the blueberries and coconut. Create a well in the center and pour in the 3/4 cup heavy cream, egg, and coconut extract. Use a fork to pull the mixture together gently until a soft dough forms. Divide the batter into two even balls. Pat the dough balls into two 6 inch circles.

INGREDIENTS:


1/2 cup softened salted butter
1/3 cup Gentle Sweet, DIY Gentle Sweet (my pick), or low-carb sweetener of choice
2 large eggs
1 tablespoon vanilla extract
2 cups blanched almond flour
1/2 teaspoon baking soda
2/3 cup sugar-free chocolate chips

INSTRUCTIONS:


• Preheat oven to 350º F and spray two baking sheets with coconut oil baking spray. Set aside.

• Using a stand mixer, beat together butter and sweetener. Add eggs one at a time, beating for one minute and scraping the bowl after each addition. Beat in vanilla extract.

• Add almond flour and baking soda and mix until thoroughly combined. Fold in chocolate chips with a spatula.

• Use a tablespoon-size cookie scoop to portion out 18 cookies, dividing them between the two prepared pans. It's alright if they're fairly close together because they won't spread much.
